This quintessential English style scones can be served with honey or jam and clotted cream as a favoured topping. Tastes even better when made with organic ingredients.

Ingredients
- 200g Plain flour
- 200g Strong flour
- 100g Unsalted butter
- 100g Sugar
- 25g Baking powder
- 2 Eggs, large
- 180ml Milk
- 100g Raisins
Cooking Method

- 1. Mix the flour, butter, sugar and baking powder until a smooth consistency.

- 2. Mix the milk and eggs together and pour onto the dry ingredients.

- 3. Add the raisins and mix slowly until you have a dough – do not over mix.

- 4. Rest for 10 minutes, then roll out to 3cm thick and cut using a round pastry cutter.

- 5. Put the scones onto a baking tray and brush with egg.

- 6. Bake for 15-18 minutes at 180°C.
